Tiger Nut

Tiger nut is an underutilized crop of the family Cyperaceae, which produces rhizomes from the base and tubers that are somewhat spherical. It is widely distributed in the temperature zones within South Europe as its probable origin, and has become naturalized in Ghana, Nigeria and Sierra Leone. In Nigeria, tiger nuts are widely used in making kunu, a popular traditional drink, and are also eaten raw or roasted. Additionally, tiger nut milk, flour, and oil are becoming increasingly popular as alternatives to dairy and wheat-based products, with a growing market among consumers who are lactose intolerant or gluten-sensitive.

Tiger nut is a good source of food for humans and animals, as it contains high percentage of carbohydrates (mono- and di-), fiber, and oil (especially oleic acid) and its moderately high level of protein, minerals (calcium, magnesium, iron and phosphorous), and vitamins C and E. The health benefits reflect reduction of low density lipoprotein-cholesterol, which is good for sports’ men and women and those intending to lose weight; it is also said to serve as a cure for flatulence and diarrhea, and as control against heart attacks, thrombosis and colon cancer, among others.

Plantain Flour

Plantain flour is a popular food ingredient in Nigeria, made from the pulp of unripe plantains. It is a cheap source of iron, protein and vitamin A, and can be marketed through market women, food canteens, hotels and supermarkets. The major raw material required for production is the unripe plantain pulp which can be sourced mainly from the southern part of the country due to the climatic condition of the area.

Plantain flour is used to make elubo, a local meal consumed in Nigeria with soup, and also serves as industrial raw material in firms producing sanitary pads, fabrics, and for the food and beverage industry for making baby foods, biscuits, bread, and cakes. It is also becoming increasingly popular as an alternative to wheat-based products, with a growing market among consumers who are gluten-sensitive or lactose intolerant.

Bitter Leaf

Bitter leaf (Vernonia amygdalina) is a vegetable used for preparing the popular Bitter leaf soup. It is also known as Onugbu, Shiwaka & Ewuro by the Igbos, Hausas&Yorubas in Nigeria. Although this plant has been around for hundreds of years, only a few people know of its medicinal and healing properties. Bitter leaf as the name implies, is actually a bitter plant whose leaves, extracts, stems and barks are used for culinary, medicinal and curative purposes.

Bitter leaf is a good source of vitamins A, C, E, B1 and B2, and minerals such as calcium, magnesium, iron and phosphorous.
